Copal Tree Lodge. Belize
The Lodge
From the moment we touched down in Belize, the air was thick with the scent of saltwater and the hum of the jungle. Our adventure began at Copal Tree Lodge, a luxury eco-retreat set deep in the Toledo District. Surrounded by lush rainforest, the lodge is a celebration of sustainability — from its organic gardens to its on-site rum distillery.
The Distillery
We joined the lodge’s master distiller for an intimate farm-to-bottle rum-making journey, starting in the sugarcane fields. The cut stalks glistened in the morning sun as we learned how every drop is harvested, pressed, fermented, and aged right on property — producing a smooth, golden rum that carries the soul of Belize in every sip.
On The Water
The next morning took us out on the Caribbean Sea for an unforgettable snorkeling adventure in search of queen conch. Crystal-clear waters revealed vibrant coral gardens and darting tropical fish, and with the help of local guides, we gently harvested conch for a traditional seaside lunch.
Luxury Villas
Back on land, we explored one of the lodge’s luxury villas, a sanctuary of tropical design — high wood-beamed ceilings, sweeping jungle views, and private plunge pools that blur the line between indoor comfort and wild beauty.
Ancient Mayan Ruins
History called us next, deep in the Belizean jungle, where we wandered through the ancient Mayan ruins. Towering stone temples rose from the earth, each step a reminder of a civilization that shaped this land for millennia.
Caving
Our journey ended underground, in the cool, shadowy embrace of a limestone cave. We swam through turquoise pools illuminated by shafts of sunlight, the walls adorned with centuries-old stalactites. It was both serene and humbling — a fitting close to an episode that celebrated Belize’s natural beauty, cultural heritage, and commitment to living in harmony with the environment.
